1. Finely chop the ginger and set aside.
2. In a sop pot pour soup stock, ketchup, ginger, salt and pepper and vinegar, bring it to a boil over medium heat.
3. Once it boils lower the heat and simmer for 10 minutes.
4. After 10 minute, turn off the heat, and let it cool.
5. Store it in an air tight container and refrigerate.
6. Serve the sweet and sour sauce with chicken or pork dishes.
If using water then add extra 2 tablespoon of sugar.
