Cucumber Sambal

Ingredients
  Cucumbers 2 , peeled and sliced 1/4 inch thick
  Boiling water 1 Cup (16 tbs)
  Onion 1 , chopped
  Garlic/1/2 teaspoon garlic powder 1 Clove (5 gm), crushed
  Green pepper 1⁄2 , chopped
  Ground ginger 1⁄2 Teaspoon (1/2 Teaspoon)
  Salt 1⁄2 Teaspoon
  Oil 2 Tablespoon
  Lemon juice/Lime juice 2 Tablespoon
  Chili powder 1⁄2 Teaspoon
  Sugar 2 Teaspoon
Directions

Simmer cucumbers in water in covered saucepan, about 15 minutes or until tender.
Drain.
Cool and chop coarsely.
Combine with remaining ingredients.
Chill for 2 hours before serving
