Turkish Style Eggplant

Ingredients
  Onions 3 Medium, chopped
  Garlic 1 Clove (5 gm), chopped
  Green pepper 1 Large, diced
  Olive oil 1⁄3 Cup (5.33 tbs)
  Eggplant 1 Large, peeled and diced
  Canned tomatoes 28 Ounce
  Salt 2 Teaspoon
  Black pepper 1⁄4 Teaspoon
Directions

Saute onions, garlic and green pepper in half the olive oil.
Add diced eggplant.
Pour tomatoes over all.
Add salt, pepper, remainder of oil.
Simmer until tender.
