Noodle Soup With Tofu

Ingredients
  Groundnut oil 2 Tablespoon
  Smoked tofu 4 Ounce, cut into 1.5 cm or 3/4 inch squares
  Onions spring 4 , sliced
  Garlic 1 Clove (5 gm), crushed
  Mangetouts 3 Ounce, topped, tailed and halved (75 Gram)
  Chicken stock 2 Pint (1.2 Liters)
  Light soy sauce 2 Tablespoon
  Dry sherry 2 Tablespoon
  Instant rice noodles 2 Ounce (50 Gram)
  Salt To Taste
  Pepper To Taste
Directions

1. Heat the oil in a wok, add the tofu or bean curd and fry for 2 minutes, turning once. Remove from the wok.
2. Add the spring onions and garlic to the wok and stir-fry for 1 minute.
3. Add the mangetouts, stock, soy sauce, sherry, and salt and pepper and simmer for 2 minutes.
4. Add the noodles and tofu or bean curd and let stand for 2 minutes before serving, reheating gently if necessary.
