|Brown sugar||6 1⁄2 Pound (3 1/4 Kilogram)|
|Salt||2 Ounce (50 Gram)|
|Garlic||4 Ounce, chopped (125 Gram)|
|Ground cloves||1 Ounce (25 Gram)|
|Ground cinnamon||1 Ounce (25 Gram)|
|Cayenne pepper||1 Teaspoon|
|Vinegar||2 Pint (1 1/4 Liter)|
Put the fruit into a saucepan and just cover with water.
Bring to the boil, then simmer for 10 to 15 minutes, or until the fruit is tender.
Add the remaining ingredients and bring to the boil.
Simmer for about 30 to 45 minutes, or until the chutney is very thick.
Pour into hot, sterilized jars and seal.
Store for 6 months before using.
