Grilled Salmon Oriental
|Salmon steaks/Salmon fillets||1 1⁄2 Pound|
|Canned unsweetened pineapple juice||6 Ounce (1 Can)|
|Light soy sauce||1 Tablespoon|
|Hot pepper oil||1 Teaspoon|
|Vegetable oil||1 Tablespoon (Acceptable)|
|Garlic||2 Clove (10 gm), minced|
|Finely chopped onion||1⁄2 Cup (8 tbs)|
|Grated fresh ginger||1 Tablespoon|
|Grated lime rind||1⁄2 Teaspoon|
|Fresh lime juice||2 Tablespoon|
|Vegetable oil spray||1|
Rinse fish and pat dry.
Arrange fish in rectangular nonaluminum baking dish.
Combine all remaining ingredients in a small bowl, stir and pour over steaks, turning to coat evenly.
Cover and refrigerate overnight.
Preheat grill or broiler.
Lightly spray grill top or broiler pan with vegetable oil.
Remove steaks from marinade and place steaks over hot coals or under broiler, 4 to 5 inches from heat.
Grill 5 to 7 minutes on each side, or until fish flakes easily with a fork.
