Classic Vegetable And Paneer Biryani

An easy to Vegetable Biryani recipe. One of my favorites, this is also a very popular Indian recipe. Please try it and let me know how this Vegetable Biryani recipe turns out for you.
Ingredients
  Almonds 15 Gram
  Biryani masala 4 Tablespoon (1 Bag)
  Carrots 100 Gram
  Cashewnuts 15 Gram
  Cauliflower 100 Gram
  Curds 200 Gram
  Fried onions 40 Gram
  Garlic ginger paste 1 Tablespoon
  Green chilies 3 , sliced
  Black cumin 1 Teaspoon (Kala Jeera)
  Mint 40 Gram
  Oil 100 Milliliter
  Paneer 50 Gram
  Potatoes 100 Gram
  Rice 300 Gram
  Salt To Taste
  Whole garam masala 1 Teaspoon
Directions

GETTING READY
1. Soak rice for 1 hr in a bowl. Now boil water add rice to it, the rice to be cooked half (70%) and strain the rice.
MAKING
2. To prepare this exotic dish, take a pan add oil, whole garam masala (cardamom, clove, cinnamon, bay leaves and shahi jeera).
3. Sauté them and add jeera, ginger garlic paste, all vegetables cut into bit long size, mix well and add salt according to taste. Cook till they are half cooked. Do not over cook them as they would become soft and will not taste good for the biryani.
4. Now add fresh mint leaves, chopped coriander leaves, green chillies, biryani masala mix and half cup of curd. You can also add paneer if you desire to.
5. Take a biryani bowl, add half of the cooked vegetables to the rice, spread all over the pan add some curd, nuts (cashew nuts, almonds etc) if required, salt, golden brown fried onions, add half rice, repeat the same process again.
6. Lastly add fried onions, fried bread pieces, close it with a lid tightly, and cook over a slow flame for 5 mins.
SERVING
7. Serve hot.

Hello - this recipe looks good but I have a couple of questions. I'm in Canada and not near a good Indian grocery and also a little unsure of some of the ingredients. First question is you say you usually make your own Biryani masala...could you please post the recipe? And how much masala is in a bag? If you were to make your own ginger garlic paste should the mix be 50/50? And finally what kind of colour did you use in the end? Was that saffron color? Could this be made by soaking saffron strands in water or is it something else entirely that I need to find commercially?

Hi, I prepared this vegetable briyani just as instructed by the chef in this video. It turned out excellent! The rice and the vegetables were at their right consistency. Usually I overcook either one of them. But I can say confidently now, that if someone follows the instruction in this video it will be 100% success. Thank to the chef for his good instructions and clear explanation.
