Russian Lamb Kebabs
|Boneless lamb||2 Pound, cut into 2 inch cubes|
|Eggplant||1 Large, peeled and cut into 2 inch chunks|
|Tomatoes||2 Large, sliced|
|Freshly ground pepper||To Taste|
Preheat oven to 350° F.
Thread lamb and eggplant alternately onto 6-inch metal skewers.
Saute into melted butter until golden brown.
Place skewers in a shallow baking dish and cover with overlapping slices of tomato.
Sprinkle with freshly ground pepper and bake 30 minutes.
