Russian Lamb Kebabs

Ingredients
  Boneless lamb 2 Pound, cut into 2 inch cubes
  Eggplant 1 Large, peeled and cut into 2 inch chunks
  Butter 2 Tablespoon
  Tomatoes 2 Large, sliced
  Freshly ground pepper To Taste
Directions

Preheat oven to 350° F.
Thread lamb and eggplant alternately onto 6-inch metal skewers.
Saute into melted butter until golden brown.
Place skewers in a shallow baking dish and cover with overlapping slices of tomato.
Sprinkle with freshly ground pepper and bake 30 minutes.
