Chicken & Asian Pear Salad With Mint
|Chicken breast||1 Pound, split|
|Rice vinegar/White wine vinegar||1⁄2 Cup (8 tbs)|
|Sugar||1 1⁄2 Tablespoon (1/4 Cup If Using Wine Vinegar)|
|Chopped mint||3 Tablespoon|
|Lettuce leaves||4 , washed and crisped|
Rinse chicken and pat dry.
Steep, cool, bone, and skin as directed for Steeped Chicken with Basil Dressing using a 3- to 4-quart pan.
Cut meat diagonally into thin slices.
Mix vinegar, sugar, and chopped mint until sugar is dissolved.
Line 2 dinner plates with lettuce; arrange pear slices and chicken on lettuce.
Pour mint dressing over, then garnish with mint sprigs.
