Korean Food: Cold Cucumber Side-dish (오이 냉국)

This cold cucumber side-dish, is a very refreshing summer dish. It is delicious with both cooked rice and noodles. Cucumbers and cold water seasoned with vinegar, sugar, and sesame seeds tastes cool and delicious. You can add soaked dried seaweed also.
Ingredients
Main ingredients:
  Cucumber 2 Cup (32 tbs), julienned
  Water 1 1⁄2 Cup (24 tbs)
  Green onion 1 1⁄2 Tablespoon, finely chopped
  Green hot pepper/Sweet pepper 1 Teaspoon, finely chopped (Optional)
  Red hot pepper/Sweet pepper 1 Teaspoon, finely chopped (Optional)
Seasoning ingredients:
  Apple vinegar/Brown rice vinegar 2 Tablespoon
  Sugar 2 Tablespoon
  Salt 1⁄2 Teaspoon
  Soup soy sauce 1⁄2 Teaspoon
  Sesame seeds 1⁄2 Tablespoon
Directions

MAKING
1. In a large mixing bowl, add the cucumbers, water, green onions, hot peppers and vinegar, soup soy sauce, sesame seeds and sugar. Mix well until the sugar completely dissolves.
2. Refrigerate the dish for a couple of hours before serving.

SERVING
3. Serve chilled with cooked rice or noodles.

NOTE
If the side dish is served right away, use 1 cup of water (instead of 1 1/2 cups) and use 1/2 cup of ice.
