Ingredients
  Eggplant 1 Pound
  Tahini sauce 1⁄2 Cup (8 tbs)
  Yogurt 1⁄4 Cup (4 tbs)
  Salt To Taste
  Red vinegar 1⁄4 Cup (4 tbs) (or pomegranate molasses/lemon juice)
  Olive oil 2 Tablespoon
Directions

GETTING READY
1. Slit the eggplant and wrap in foil.
2. Roast in oven for 30 minutes at 350 degrees F.

MAKING
3. Take out the eggplant from the oven and scoop out the flesh.
4. Place the eggplant flesh in a bowl and mash with a fork.
5. Add in the tahini, yogurt, salt and red vinegar. Mix all the ingredients thoroughly.
6. Pour in the olive oil over the top.

SERVING
7. Serve Baba Ghanoush with pita bread.
