Asian Style Spicy Coleslaw
|Smooth peanut butter||6 Tablespoon (1/4 Cup Plus 2 Tablespoons)|
|Fresh lime juice||3 Tablespoon|
|Asian fish sauce||3 Tablespoon|
|Garlic clove||3 Medium, very finely chopped|
|Sriracha chili sauce||1 Tablespoon|
|Napa cabbage||2 Pound, thinly sliced|
|Red cabbage||3⁄4 Pound, thinly sliced|
|Carrots||3 Medium, julienned|
|Red bell peppers||2 , very thinly sliced|
|Chopped cilantro||3 Tablespoon|
|Freshly ground pepper||To Taste|
1. In a medium bowl, whisk the peanut butter with the lime juice, fish sauce, water, sugar, garlic and Sriracha.
2. In a large bowl, toss the sliced napa and red cabbages with the carrots, peppers, cilantro and mint. Toss the coleslaw with the peanut dressing and season with salt and black pepper.
