Beef Strips With Oyster Sauce

Ingredients
  Beef top round steak 1 Pound
  Cold water 1⁄2 Cup (8 tbs)
  Cornstarch 1 Tablespoon
  Oyster sauce 2 Tablespoon
  Dry sherry 2 Tablespoon
  Soy sauce 1 Tablespoon
  Sugar 1⁄2 Teaspoon
  Cooking oil 2 Tablespoon
  Onion 1 Large, thinly sliced and separated into rings
  Hot cooked rice 1⁄2 Cup (8 tbs)
Directions

Partially freeze beef.
Slice beef thinly across the grain into bite-size strips.
For marinade, blend water into cornstarch; stir in oyster sauce, sherry, soy sauce, and sugar; mix well.
Add beef; let stand 30 minutes at room temperature.
Drain meat, reserving marinade; set aside.
Preheat wok or large skillet over high heat; add the oil.
Stir-fry onion in hot oil about 3 minutes or till crisp-tender.
Remove onion.
Add half the beef to hot wok or skillet; stir-fry 2 to 3 minutes or till browned.
Remove beef.
Stir-fry remaining beef 2 to 3 minutes.
Return all meat to wok or skillet.
Stir reserved marinade and stir into beef.
Cook and stir till thickened and bubbly.
Stir in onion; cover and cook 1 minute.
