Oriental Rice Salad

Ingredients
  Cooked rice 3 Cup (48 tbs)
  Frozen no salt added green peas 10 Ounce, Defrosted (1 Package)
  Scallions 4 , sliced
  Diced cooked chicken 1 1⁄2 Pound
  Stalk celery 1 , diced
  Diced green bell pepper 2 Tablespoon
  Sherry 2 Tablespoon
  Light soy sauce 1 Tablespoon
  Hot pepper 1⁄4 Teaspoon
  Ground ginger 1⁄8 Teaspoon
  Rice vinegar 4 Tablespoon
  Vegetable oil 2 Tablespoon (Of Your Choice)
  Dijon mustard 1 Tablespoon
Directions

In a large bowl, combine rice, peas, scallions, chicken, celery and bell pepper.
Mix well.
In a jar with a tight-fitting lid, combine remaining ingedients.
Shake well.
Pour liquid over rice mixture.
Mix well.
Spoon rice mixture into a ring or serving bowl and cover.
Refrigerate for at least 1/2 hour.
Stuff rice mixture into 8 hollowed tomatoes.
Stuff rice mixture into 8 hollowed green bell pepper halves.
