Bottle Gourd Kofta Curry

Ingredients
  Bottle gourd 500 Gram
  Ginger green chili paste 1 Tablespoon
  Cumin coriander powder 2 Teaspoon
Ground masala
  Onions 2 Large
  Ginger piece 1 Small
  Garlic 8 Clove (40 gm)
  Coriander leaves 1⁄2 Bunch (50 gm)
  Poppy seeds 1 Tablespoon
  Vanaspati/Oil 2 Cup (32 tbs) (For Frying)
  Coriander seeds 2 Tablespoon
  Tomatoes 3 , chopped
  Chili powder 1 Teaspoon
  Turmeric 1 Teaspoon
  Gram flour/Plain flour 3 Tablespoon
  Cornflour 2 Tablespoon
  Cumin seeds 1⁄2 Teaspoon
  Dry chilies 10
  Salt 2 Teaspoon
  Garam masala 1 Teaspoon
  Ghee 3 Tablespoon
Directions

Wash, peel and grate bottle gourd.
Gently press with two hands and remove excess water.
Do not squeeze much.
Add seasonings and gram flour to grated gourd.
Make balls of 1 inch diameter.
Deep fry in hot fat till light brown.
Add 1/2 cup water to tomatoes and boil for 15 minutes.
Liquidise and pass it through a sieve.
Melt ghee in a pan and fry the ground masala, sprinkling some water as masala catches at the bottom.
Fry for 10 minutes.
When ghee comes on top add strained tomatoes.
Cook till the mixture is dry and ghee comes on top again.
Add 2 1/2 to 3 cups warm water.
Let is come to a boil.
Blend cornflour in 4 tablespoon milk and add it to the boiling gravy.
Lower heat and put koftas in the gravy.
Add garam masala.
Sprinkle coriander leaves.
