Seafood Kabobs With Pineapple Juice

Ingredients
  Pineapple juice 1⁄3 Cup (5.33 tbs)
  Lemon juice from concentrate 1⁄3 Cup (5.33 tbs)
  Vegetable oil 2 Tablespoon
  Brown sugar 2 Tablespoon
  Grated orange rind 1 Teaspoon
  Ground cinnamon 1⁄4 Teaspoon
  Large raw shrimp 3⁄4 Pound, peeled and deveined
  Sea scallops 1⁄2 Pound
  Melon 1 Cup (16 tbs) (Chunks / Balls)
  Avocado 1 Medium, peeled, seeded and cut into chunks
Directions

In large shallow dish or plastic bag, combine juices, oil, sugar, rind and cinnamon; add seafood and melon.
Cover; marinate in refrigerator 4 hours or overnight.
Place shrimp, scallops, melon and avocado on skewers.
Grill or broil 3 to 6 minutes or until shrimp are pink and scallops are opaque, basting frequendy with marinade.
Refrigerate leftovers.
