Seafood Kabobs With Pineapple Juice
|Pineapple juice||1⁄3 Cup (5.33 tbs)|
|Lemon juice from concentrate||1⁄3 Cup (5.33 tbs)|
|Vegetable oil||2 Tablespoon|
|Brown sugar||2 Tablespoon|
|Grated orange rind||1 Teaspoon|
|Ground cinnamon||1⁄4 Teaspoon|
|Large raw shrimp||3⁄4 Pound, peeled and deveined|
|Sea scallops||1⁄2 Pound|
|Melon||1 Cup (16 tbs) (Chunks / Balls)|
|Avocado||1 Medium, peeled, seeded and cut into chunks|
In large shallow dish or plastic bag, combine juices, oil, sugar, rind and cinnamon; add seafood and melon.
Cover; marinate in refrigerator 4 hours or overnight.
Place shrimp, scallops, melon and avocado on skewers.
Grill or broil 3 to 6 minutes or until shrimp are pink and scallops are opaque, basting frequendy with marinade.
