|Sweet sake/Dry sherry||1⁄4 Cup (4 tbs)|
|Grated fresh ginger root||1 Teaspoon|
|Chicken livers||1⁄2 Pound, cut in half|
|Whole chicken breast||1 Large, split, skinned, boned, and cut in 1-inch cubes|
|Scallions||4 , cut into 1 inch pieces|
|Sushi||1 Cup (16 tbs)|
Combine soy sauce, sherry, sugar, ginger root, and 1/4 cup water.
Boil 1 minute; cool.
Marinate chicken livers, Chicken cubes, and scallion pieces in soy mixture for 15 to 30 minutes; turn once.
On short wooden skewers thread a chicken cube, a chicken liver piece, a scallion piece, another chicken liver piece, and a chicken cube.
Grill over hot coals 4 to 5 minutes per side; brush occasionally with marinade
