Nasi Goreng

Nasi goreng - Indonesian stir-fried rice is a staple food in Indonesian cuisine. Nasi means rice and goreng means stir fried. Nasi goreng - Indonesian stir-fried rice is usually spicy but one can make variations as per taste. Ideally, it is made from freshly cooked rice but can also be made with leftover rice.
For the balinese spice paste (base gede)
  Black peppercorns 3⁄4 Teaspoon
  Nutmeg 1⁄4 Teaspoon
  Macadamia nuts 15 Gram, toast
  Sesame seeds 1⁄2 Teaspoon
  Shallots 30 Gram, chop
  Fresh root ginger 15 Gram, chop
  Galangal 20 Gram, chop
  Ground turmeric 1⁄2 Teaspoon
  Lemongrass stalks 1 1⁄2 Medium, chop
  Garlic 10 Gram, chop
  Red chilli 1 Medium, seeded, thinly sliced
  Bird's eye chillies 2 Small, seeded, thinly sliced
  Shrimp paste 1⁄2 Teaspoon
  Palm sugar 1 1⁄2 Teaspoon
  Salt 1⁄2 Teaspoon
  Vegetable oil 1 1⁄2 Tablespoon
  Lime juice 1⁄4 Small
For the indonesian stir-fried rice
  Vegetable oil 2 Tablespoon
  Shallots 375 Gram, thinly sliced
  Salt To Taste
  Cooked long grain rice 300 Gram
  Green beans 100 Gram, chop (cut into 2.5cm/1in pieces)
  Garlic 20 Gram, finely chopped
  Red chillies 2 Medium, finely chopped
  Bird's eye chilli 1 Small, finely chopped
  Carrot 1 Medium, shredded
  Tomato puree 1 Tablespoon
  Ketjap manis 1 Tablespoon
  Cooked turkey meat 250 Gram, chop (cut into small pieces)
  Light soy sauce 1 Tablespoon
  Spring onions 8 Small, thinly sliced
For the garnish
  Free range eggs 4 Large
  Cucumber 1⁄4 Medium, slice
  Tomatoes 2 Medium, slice

1. Chop the shallots, galangal, discard the outer leaves from the lemon grass and then chop them.
2. Chop the garlic, hot red chili and bird’s eye chili for both seeds removed.
3. Grind the nutmeg, peppercorn and sesame seeds into fine powder using a spice grinder.
4. For the stir fried rice, cut the green beans into 2 ½-1 inch pieces, finely chop the garlic and thinly slice both the chilies seed removed.
5. Thinly slice the spring onion and tomatoes, shred the carrots, set aside.
6. Cut the cooked turkey into small pieces, clean the frozen shrimps, set asdie.

7. Combine all the ingredients for the paste in a mortar and grind then all together until you get a smooth paste.
8. Once done remove and transfer in a bowl, until needed.
9. In a wok pour oil and add the garlic, both the chilies and shallots and stir fry them together.
10. Add the carrots followed by the spice paste, stir everything well add tomato puree and ketjap manis.
11. Mix everything together until well combined, add the rice, prawns and green beans, and toss everything.
12. Finally add the turkey, spring onions and soy sauce, mix everything and turn off the heat.
13. Transfer the rice into a serving plate and place a sunny side up fried egg on top.
14. Garnish with cucumber, tomatoes and fried onions if you like.

15. Serve the nasi goreng hot.
