Red Thai Curry Paste

Ingredients
  Dried serrano/Thai chiles 7 , finely chopped
  Lemongrass stalk 1 , thinly sliced
  Minced garlic 2 Tablespoon
  Minced onion 1⁄4 Cup (4 tbs)
  Minced coriander root 1 Tablespoon
  Galangal slices 2 , minced (Fresh)
  Kaffir lime peel strips 3 , soaked, drained, and minced
  Salt 1 Teaspoon
  Shrimp paste 1 Teaspoon
  Ground coriander 2 Teaspoon
  Ground caraway/Ground cumin 1⁄2 Teaspoon
Directions

Combine ingredients in a mortar or blender and pound or blend to a paste.
Cover and refrigerate until ready to use.
