Beef And Vegetable Kabobs
|Beef round steak||1 Pound, cut into 1 1/2 inch chunks|
|Onion||1 Medium, cut into quarters and separated into pieces|
|Soy sauce||3 Tablespoon|
|Dry sherry||1 Tablespoon|
|Salad oil||1 Tablespoon|
|Chili sauce||1 Tablespoon|
|Ground ginger||1⁄4 Teaspoon|
|Yellow squash||1 Medium|
|Pepper||1 Medium (Red/Green)|
|Mushrooms||1⁄2 Pound (Medium)|
|Bottled italian dressing||1⁄4 Cup (4 tbs)|
1. In medium-sized bowl, mix first 7 ingredients. Cover mixture and refrigerate at least 2 hours, stirring occasionally.
2. About 1 hour before serving, prepare outdoor grill for barbecuing.
3. Cut zucchini and yellow squash into 1-inch chunks. Cut red pepper into 1-inch pieces. On 2 long skewers, alternately thread zucchini, yellow squash, pepper, and mushrooms. On 2 more skewers, alternately thread beef chunks and onion, reserving marinade.
4. Place vegetable and meat skewers on grill over medium heat; cook about 10 minutes, brushing vegetables with Italian dressing and meat with reserved marinade frequently and turning skewers occasionally, until vegetables are tender and meat is of desired doneness.
