|Uncooked couscous||1⁄2 Cup (8 tbs)|
|Cucumber||1 Cup (16 tbs), chopped (1 small sized)|
|Onion||1⁄2 Cup (8 tbs), finely chopped (1 medium sized)|
|Tomato||1⁄2 Cup (8 tbs), chopped (1 small sized)|
|Chopped parsley||1⁄2 Cup (8 tbs) (fresh)|
|Lime juice||1⁄4 Cup (4 tbs)|
|Chopped mint||2 Tablespoon (fresh)|
|Vegetable oil||2 Tablespoon|
1. Heat broth to boiling in 2-quart saucepan. Stir in couscous; remove from heat. Cover and let stand 5 to 10 minutes or until liquid is absorbed.
2. Mix couscous and remaining ingredients in large glass or plastic bowl. Cover and refrigerate at least 1 hour to blend flavors.
