Tabbouleh Salad

Enjoy this mint- and parsley-flavored couscous salad.
Ingredients
  Chicken broth/Vegetable broth 1 Cup (16 tbs)
  Uncooked couscous 1⁄2 Cup (8 tbs)
  Cucumber 1 Cup (16 tbs), chopped (1 small sized)
  Onion 1⁄2 Cup (8 tbs), finely chopped (1 medium sized)
  Tomato 1⁄2 Cup (8 tbs), chopped (1 small sized)
  Chopped parsley 1⁄2 Cup (8 tbs) (fresh)
  Lime juice 1⁄4 Cup (4 tbs)
  Chopped mint 2 Tablespoon (fresh)
  Vegetable oil 2 Tablespoon
  Salt 1⁄2 Teaspoon
Directions

1. Heat broth to boiling in 2-quart saucepan. Stir in couscous; remove from heat. Cover and let stand 5 to 10 minutes or until liquid is absorbed.
2. Mix couscous and remaining ingredients in large glass or plastic bowl. Cover and refrigerate at least 1 hour to blend flavors.
