Quick Tabbouleh

  Cracked wheat 1⁄2 Cup (8 tbs)
  Tomatoes 3 Medium, finely chopped
  Parsley 1 Cup (16 tbs), finely chopped
  Onion 1 Cup (16 tbs), finely chopped
  Lemon juice 1⁄3 Cup (5.33 tbs)
  Salt 2 Teaspoon
  Vegetable oil 1 Teaspoon

Soak cracked wheat in cold water for about 10 minutes, drain.
Wrap in cheese cloth and squeeze until dry.
In large bowl, combine cracked wheat, tomatoes, parsley, onion, lemon juice and salt; toss lightly with a fork.
Marinate at least half hour before serving.
Just before serving, stir in the oil.
