Lamb Shish Kabobs
|Lamb shoulder/Shank||3⁄4 Pound, cut into 1 inch cubes|
|Onion||1⁄2 Small, thinly sliced|
|Pineapple chunks||1⁄2 Cup (8 tbs)|
|Onion||1⁄2 Large, cut into 1 inch pieces|
|Firm tomato||1 , cut into 1 inch wedges|
|Vegetable oil||1 Tablespoon|
|Coarsely ground pepper||1⁄8 Teaspoon|
Place lamb cubes in a bowl.
Tuck in onion slices.
Refrigerate 1 to 2 hr.
Alternate meat cubes, chunks of pineapple, onion, and tomato on metal skewers.
Roll in vegetable oil.
Broil 3" from heat, about 15 to 20 min.
Turn as meats and vegetables brown.
