Lamb Shish Kabobs's picture
  Lamb shoulder/Shank 3⁄4 Pound, cut into 1 inch cubes
  Onion 1⁄2 Small, thinly sliced
  Oregano 1⁄2 Teaspoon
  Pineapple chunks 1⁄2 Cup (8 tbs)
  Onion 1⁄2 Large, cut into 1 inch pieces
  Firm tomato 1 , cut into 1 inch wedges
  Vegetable oil 1 Tablespoon
  Salt 3⁄4 Teaspoon
  Coarsely ground pepper 1⁄8 Teaspoon

Place lamb cubes in a bowl.
Tuck in onion slices.
Add seasonings.
Refrigerate 1 to 2 hr.
Alternate meat cubes, chunks of pineapple, onion, and tomato on metal skewers.
Roll in vegetable oil.
Broil 3" from heat, about 15 to 20 min.
Turn as meats and vegetables brown.
