Microwave Oriental Relish Dip
|Peeled chopped tomato||1 Cup (16 tbs)|
|Soy sauce||1⁄4 Cup (4 tbs)|
|Drained canned crushed pineapple||1⁄4 Cup (4 tbs)|
|Chopped red bell pepper||1 Tablespoon|
|Green onion||1 Tablespoon, finley chopped|
|Garlic||1 Tablespoon, minced|
|Lemon juice||2 Teaspoon|
|Grated ginger||1 1⁄2 Teaspoon|
|Rice wine vinegar||2 Teaspoon|
|Sesame oil||1 Teaspoon|
|Plain low fat yogurt||4 Cup (64 tbs)|
|Creamy peanut butter||1 Cup (16 tbs)|
|Assorted vegetables||8 Cup (128 tbs)|
Combine tomato, soy sauce, pineapple, sugar, red pepper, onion, garlic, lemon juice and ginger in 1-quart glass measuring cup.
Microwave at HIGH (100% power) 8 minutes; stir every 2 minutes.
Stir in rice wine vinegar and sesame oil.
Microwave 2 to 3 minutes or until ingredients are reduced to 1 cup.
Stir in arrowroot.
Store relish covered in glass container in refrigerator.
To make dip: Combine relish with yogurt and peanut butter in large bowl; mix until well blended.
