If quinoa is new to you hello stranger! You will instantly this fabulous grain the fact that it is crazy healthy and delicious to boot makes it the perfect pantry essential for me. This quinoa recipe is entirely quick to make for dinner any night and bonus, even my kids like it. (Is this a test of yours too?)
Ingredients
Quinoa 1 Cup (16 tbs) (Will Make 3 Cup When Cooked)
  Chicken broth/Stock 2 1⁄2 Cup (40 tbs)
Chopped parsley 1 Cup (16 tbs)
Chopped scallions 1⁄2 Cup (8 tbs)
Cucumber 1 , seeded and chopped
  Grape tomatoes 1 1⁄2 Cup (24 tbs)
Frozen edamame 2 Cup (32 tbs) (Cooked Per Package Directions)
Chopped pecans 1⁄2 Cup (8 tbs)
Feta cheese 1 Cup (16 tbs) (For Sprinkle Over Top Of Salad)
For vinaigrette dressing
  Vinaigrette dressing 1 Tablespoon
Olive oil 1⁄4 Cup (4 tbs)
  Garlic 1 , minced
  Salt To Taste
  Pepper To Taste
Lemon juice 1⁄2 Cup (8 tbs)
Directions

Place quinoa and 2-1/2 C. chicken broth in a saucepan and bring to a boil. Reduce to a simmer. Cover and cook until all the liquid is absorbed (about 15 minutes). You will know that the quinoa is done when all the grains have turned from white to transparent, and the spiral-like germ has separated (think little tail).

Mix all ingredients (except feta) in a bowl and toss thoroughly. To make vinaigrette, mix salt and pepper with lemon juice and minced garlic clove. Add in olive oil and mix well. Pour over quinoa edamame mixture and combine. Season additionally if you want more punch to it. Let marinate for 1/2 hour if you can. Serve with a sprinkling of feta on each portion.
