Indonesian Baked Chicken
|Dark brown sugar||1⁄4 Cup (4 tbs), firmly packed|
|Boiling water||1 Tablespoon|
|Ketjap manis||3 Tablespoon (Indonesian Sweet Soy Sauce)|
|Mashed garlic||2 Tablespoon (About 7 Cloves)|
|Fresh lime juice||2 Tablespoon|
|Chicken||3 Pound, cut into serving-sized pieces|
Place brown sugar in a small bowl.
Stir in boiling water, then add the remaining marinade ingredients.
Brush chicken pieces with this sauce.
Refrigerate, if possible, for several hours, allowing the flavors in the sauce time to permeate the chicken.
Bake prepared chicken in a preheated 350-degree oven about 1 hour, or until chicken is cooked through.
The sauce is equally good on broiled or barbecued chicken.
