Tabouleh is a mediterranean bulgur salad preparation. Made with fresh vegetables, the bulgur is tossed with olive oil, lemon juice and herbs like parsley and mint for a tantalising taste. Served as a side or accopaniment, it is nurtitious and healthy.
  Bulgur 1 Cup (16 tbs)
  Boiling water 2 Cup (32 tbs)
  Lemon juice 4 Teaspoon
  Olive oil 2 Teaspoon
  Ripe tomato/1 cup canned low sodium tomatoes, drained and chopped 2 Medium, cored, seeded, and chopped
  Minced fresh mint/1 tablespoon mint flakes 1⁄4 Cup (4 tbs)
  Minced parsley 3 Tablespoon
  Red onion 1⁄2 Small, sliced thin
  Green onions 2 , chopped fine (Including Tops)
  Ground coriander 1⁄4 Teaspoon
  Ground cumin 1⁄4 Teaspoon
  Hot red pepper sauce 1⁄8 Teaspoon

Place the bulgur in a large heatproof bowl and pour the boiling water over it.
Cover and let stand for 30 minutes.
Drain off any liquid that remains.
In another large bowl, mix the lemon juice, olive oil, tomatoes, mint, parsley, red onion, green onions, coriander, cumin, and red pepper sauce.
Add the bulgur and toss well to mix.
