Indonesian Chicken And Pear Salad
|Cooked and cubed chicken||1 1⁄2 Cup (24 tbs)|
|California bartlett pears||3 , halved and cored (Fresh)|
|Macadamia nuts/Peanuts||1⁄2 Cup (8 tbs), coarsely chopped|
|Cucumber slices||1⁄2 Cup (8 tbs)|
|Slivered crystallized ginger||3 Tablespoon|
|Thinly sliced green onion||2 Tablespoon|
|Lemon juice||2 Tablespoon (Curry Dressing)|
|Iceberg lettuce cups||4 (Curry Dressing)|
Place chicken in bowl.
Cube 2 pear halves; add pear cubes, nuts, cucumber, ginger and onion to chicken.
Add Curry Dressing; toss gently to mix.
Place each lettuce cup on individual salad plate.
Dip pear halves in lemon juice and arrange each half in 1 lettuce cup.
Spoon chicken mixture evenly onto pear halves.
Sprinkle with coconut, if desired.
