Filipino Sunrise Pichi Pichi

This recipe is a real surprise. I like the sunrise colour and the taste.
  Cassava 1 Cup (16 tbs)
  Sugar 1 Cup (16 tbs)
  Water 1 Cup (16 tbs)
  Lijia 1 Teaspoon
  Calamansi/Orange peel with 1 teaspooon water and strained to get flavor 1 Teaspoon
  Achuete powder 1⁄2 Teaspoon (Mama Sitas)
  Niyog 1 Cup (16 tbs), grated, desiccated or freshly grated

Remove the tip of the cassava and make a cut in the cassave skin. Using the tip of the knife remoive skin.
Grate the cassava until it becomes a smooth mass.
In a bowl, mix cassava, sugar, lime water, water, lijia and achuete powder. Mix until it form a smooth paste.
Steam the mixture until it is done.
Remove and let it cool.
Scoop out pichipichi and roll it in coconut.
Serve it over banana leaf.
