Mee Goreng Nyonya

Mee gorange nyonya is an Malaysian favourite. It is easy and yummy. The fragances of the various spices and vegetables make the dish smell delicious. Serve the noodles nyonya style.
Ingredients
  Cooking oil 3 Tablespoon
  Garlic 2 Clove (10 gm), peeled and finely chopped
  Soya bean paste 1 Tablespoon
  Water 1 Cup (16 tbs)
  Mustard greens stalks 3
  Fried mackerel 1 Can (10 oz) (Ayam Brand In Black Beans 150 G)
  Salt To Taste
  Pepper To Taste
  Yellow noodles 250 Gram
  Beans sprout 30 Gram
  Light soya sauce 2 Teaspoon (Ayam)
  Thick soya sauce 2 Teaspoon (Ayam)
  Red chilies 2 , sliced at an angle
  Egg 1
  Coriander leaves 1 Tablespoon, chopped
  Fried shallot 2 Tablespoon
Directions

STIR FRYING
Heat up the oil in a wok on medium heat and fry the garlic until fragrant.
Add in the fried mackerel and the soya bean paste. Fry until it becomes aromatic
Add the mustard greens and stir fry briefly. Add in the noodles together with the light
and thick soya sauces. Add in the salt and sugar.
Add in the bean sprouts and stir fry very quickly to avoid to overcook the bean sprouts.
Remove from the heat.
PRESENTATION
Put the noodle on the plate and garnish with sliced red chilies, omelet, coriander leaves and fried
shallots on top.
