Orange Rum Sherbet
|Unflavored gelatin||2 Teaspoon|
|Cold water||3⁄4 Cup (12 tbs)|
|Sugar||3⁄4 Cup (12 tbs)|
|Orange juice||1 Cup (16 tbs)|
|Lime juice||1 1⁄2 Tablespoon|
|Light rum||1⁄2 Cup (8 tbs)|
|Grated orange rind||1 Tablespoon|
1. Soften the gelatin in one-quarter cup of the water.
2. Combine the remaining water and the sugar and boil one minute. Add the gelatin and stir until dissolved. Add the orange and lime juice, rum, orange rind and salt. Strain and cool.
3. Pour into freezing tray; set refrigerator at point for freezing ice cream and freeze to a mush.
4. Place the mixture in a chilled bowl and beat with a rotary beater until smooth. Return to the tray and freeze, stirring several times, until almost firm.
