Beef In Oyster Sauce With Snow Peas And Water Chestnuts

Ingredients
  Beef steak 1 Pound
  Oyster sauce 2 Tablespoon
  Soy sauce 1 Tablespoon (Use Black Variety)
  Chinese rice wine 1 Tablespoon
  Sugar 1⁄2 Teaspoon
  Tapioca starch 1 Tablespoon
  Fresh snow peas 1⁄2 Pound
  Fresh water chestnuts 10
  Sugar 1 Teaspoon
  Tapioca starch 1⁄2 Teaspoon
  Sesame oil 1 Teaspoon
  Peanut oil/Vegetable oil 5 Tablespoon
  Salt 1⁄4 Teaspoon
  Scallion stalks 1 , cut into 1 inch pieces
  Ginger root slice 2
Directions

Cutting across the grain, slice the beef into very thin pieces 1/2 inch (1.5 cm) wide and 2 inches (5 cm) long.
Marinate the sliced beef with the oyster sauce, soy sauce, wine, sugar, and tapioca starch and set aside.
Remove the stem and strings from the snow peas.
Rinse and then parboil in a pot.
Rinse in cold water until cool.
Peel and slice the water chestnuts.
Mix the ingredients for the combined seasoning sauce.
Heat 1 Tbs oil in a wok over high heat.
Add the salt first and then the snow peas, stirring constantly (about 1/2 minute).
Remove the snow peas and spread on a plate.
In the same wok, add the remaining 4 Tbs of oil, scallion,and ginger root.
Add the beef mixture and stir constantly until the beef is almost cooked (not over 2 minutes).
Add the snow peas and water chestnuts and then the well stirred combined seasoning sauce.
Mix thoroughly.
