Minted Lamb Kebabs
|Lean lamb||2 Pound, cut into 1 1/2 inch cubes|
|Chopped fresh mint||2 Tablespoon|
|Vinegar||1⁄2 Cup (8 tbs)|
|Brown sugar||2 1⁄2 Tablespoon|
|Dry mustard||1 Pinch|
|Grated lemon rind||1 Teaspoon|
|White wine||1⁄4 Cup (4 tbs)|
Place meat in a bowl, add marinade and mix well.
Cover and stand for 1-2 hours.
Drain meat and alternate meat, tomatoes and mushrooms onto skewers.
Barbecue over hot coals for approximately 20 minutes, turning and basting frequently with marinade while cooking.
