Pork And Apricot Kebabs
|Boneless shoulder pork||2 Pound|
|Dried apricots||8 Ounce|
|Pineapple juice||1 Cup (16 tbs)|
|Soy sauce||1⁄2 Cup (8 tbs)|
|Garlic||1 Clove (5 gm), crushed|
|Chopped preserved ginger||2 Teaspoon|
Cut pork into 1 1/2 inch cubes and place in a mixing bowl, pour over marinade, mix well and cover.
Stand for 1 hour.
Drain meat and apricots and place alternately on skewers.
Barbecue over hot coals for approximately 20-25 minutes or until meat is tender.
Turn frequently and baste with the marinade while cooking.
Place dried apricots in another bowl, cover with marsala and stand for 1 hour.
