This Pork And Apricot Kebabs is a side dish. Enjoy the deadly combination of non-veg and fruits in your menu and share your feelings with us!
  Boneless shoulder pork 2 Pound
  Dried apricots 8 Ounce
  Marsala 1 Tablespoon
  Pineapple juice 1 Cup (16 tbs)
  Soy sauce 1⁄2 Cup (8 tbs)
  Garlic 1 Clove (5 gm), crushed
  Chopped preserved ginger 2 Teaspoon

Cut pork into 1 1/2 inch cubes and place in a mixing bowl, pour over marinade, mix well and cover.
Stand for 1 hour.
Drain meat and apricots and place alternately on skewers.
Barbecue over hot coals for approximately 20-25 minutes or until meat is tender.
Turn frequently and baste with the marinade while cooking.
Place dried apricots in another bowl, cover with marsala and stand for 1 hour.
