This easy to make Tabbouleh is one of my Summer favorites. It's fresh, gorgeous, and so flavorful. I love serving it alongside some simply grilled meats for the perfect dinner!
Bulgur wheat | 3/4 Cup (12 tbs) | |
Boiling water | 1 Cup (16 tbs) | |
Lemon juice | 1/4 Cup (4 tbs) ((from 2 lemons)) | |
Salt | To Taste | |
Pepper | To Taste | |
Cherry tomatoes | 1 Pint , cherry tomatoes | |
Hothouse cucumber | 1 , diced | |
Scallions/1 bunch, white and green parts | 1 Ounce , chopped | |
Chopped fresh mint | 1 Cup (16 tbs) | |
Chopped fresh parsley | 1 Cup (16 tbs) |
GETTING READY:
In a bowl, combine bulgur wheat, boiling water, lemon juice, salt, pepper and mix well.
Cover with cling wrap and allow to stand for 1 hour.
MAKING:
Add cherry tomatoes, cucumber, scallions, mint, parsley, feta cheese, salt, pepper and mix well.
SERVING:
Serve and enjoy!
