Delicious Chicken curry!
|Olive oil||1 Tablespoon|
|Yam||2 , bite size pieces|
|Chicken breast||2 , chopped finely|
|Garden curry spice blend||2 Tablespoon|
|Organic coconut milk||1 Can (10 oz)|
1. In a skillet, heat olive oil, add yam pieces and chicken. Stir and cook until lightly browned.
2. Add spice blend and coconut milk. Simmer for 5-10 minutes or until cooked through.
3. Garnish with chives and serve over a bed of brown rice, quinoa or baby greens.
