How to Braise Artichoke?

To braise artichokes, a marinade is first prepared with ingredients like lemon juice, garlic, thyme, salt and pepper. The outer leaves of the artichokes are then removed, the top half is cut off, and the artichoke is trimmed with a paring knife to its center. All along, a lemon half is rubbed on the exposed surface of the artichoke to prevent discoloration. The artichoke is cut from the center and the choke is scraped out by means of a spoon. Each piece is further cut into half. These artichoke pieces are soaked in marinade and heated till boiling point. After this, the artichokes along with marinade are placed in a baking dish which is covered with foil. The artichokes are baked till they are fork tender, and then removed from the oven and allowed to cook.Other braised artichoke recipes involve sautéing the artichokes (pre-soaked in acidulated water) with onion and garlic in heated olive oil, and then cooking by simmering in boiling water along with seasonings.
