Appetizer Artichoke Hearts
|Artichoke hearts||3 Ounce|
|Olive oil||1 Cup (16 tbs)|
|Onion||1 Medium, chopped|
|Chopped mushrooms||1 Cup (16 tbs)|
|Water chestnuts||8 Ounce, chopped|
|Chopped walnuts||1 Cup (16 tbs)|
|Green onions||4 , minced|
|Ground red pepper||To Taste|
|Minced parsley||1 Cup (16 tbs)|
|Roasted red peppers||8 Ounce, sliced (For Garnish)|
Drain the artichoke hearts.
Heat the oil in a heavy skillet.
Add the onion and saute until translucent.
Add the mushrooms.
Saute ten minutes longer.
Set aside to cool.
To the first mixture, add all the remaining ingredients, mixing well.
Transfer to a serving dish and serve.
Or you can fill the artichoke hearts with the mushroom mixture.
Arrange on a serving platter.
Garnish with sliced red peppers.
