Appetizer Artichoke Hearts

Ingredients
  Artichoke hearts 3 Ounce
  Olive oil 1 Cup (16 tbs)
  Onion 1 Medium, chopped
  Chopped mushrooms 1 Cup (16 tbs)
  Water chestnuts 8 Ounce, chopped
  Chopped walnuts 1 Cup (16 tbs)
  Green onions 4 , minced
  Salt To Taste
  Ground red pepper To Taste
  Minced parsley 1 Cup (16 tbs)
  Roasted red peppers 8 Ounce, sliced (For Garnish)
Directions

Drain the artichoke hearts.
Set aside.
Heat the oil in a heavy skillet.
Add the onion and saute until translucent.
Add the mushrooms.
Saute ten minutes longer.
Set aside to cool.
To the first mixture, add all the remaining ingredients, mixing well.
Transfer to a serving dish and serve.
Or you can fill the artichoke hearts with the mushroom mixture.
Arrange on a serving platter.
Garnish with sliced red peppers.
