Artichokes In A Shrimp Ring

Ingredients
  Lemon gelatin 6 Ounce (2 package, 3 ozs each)
  Boiling water 2 Cup (32 tbs)
  Salt 1⁄2 Teaspoon
  V-8 vegetable juice/Tomato juice 2 Cup (32 tbs)
  Lemon juice 4 Tablespoon
  Onion 2 Tablespoon, grated
  Hot pepper sauce 3 Drop
  Sweet basil 1⁄4 Teaspoon
  Bay shrimp 1⁄2 Pound, cooked
  Ripe avocados 2
  Celery 1⁄2 Cup (8 tbs), diced
Directions

MAKING
1. Stir gelatin into water and add salt and stir to dissolve also
add vegetable or tomato juice, lemon juice, onion, pepper sauce and basil and chill until mixture congeals
2. Add shrimp, 1 avocado peeled and diced, and celery and pour into a 2-quart ring mold and chill
3. Unmold onto salad greens and peel and dice remaining avocado, combine with artichoke hearts and fill center of ring

SERVING
4. Served with a small bowl of mayonnaise lightened with whipped cream
