Artichoke Bottoms Stuffed With Spinach

Ingredients
  Artichoke bottoms 1 Can (10 oz)
  Frozen chopped spinach 10 (1 Package)
  Butter 3 Tablespoon
  Minced onion 1⁄4 Cup (4 tbs)
  Sour cream 1⁄4 Cup (4 tbs)
  Parmesan 2 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

Drain artichoke bottoms.
Set aside.
Cook spinach according to package directions.
Drain.
Saute onion in butter until tender.
Combine spinach, sauteed onion, sour cream, Parmesan cheese, salt and pepper.
Stuff mixture into artichoke bottoms.
Sprinkle additional Parmesan cheese lightly on top.
Place in flat casserole with small amount of water in bottom.
Bake at 350 degrees for 15 to 20 minutes.
Serve hot.
Serves 4 to 6.
