Fried Jerusalem Artichokes With Walnuts

Ingredients
  Jerusalem artichokes 1 1⁄4 Pound (850 Gram)
  Olive oil 5 Tablespoon
  Caster sugar 1 Teaspoon
  Walnut halves 3 Ounce (85 Gram)
  Garlic clove 1 Large, finely chopped (Use A Fat Clove)
  Parsley leaves 1⁄4 Cup (4 tbs), chopped (A Handful)
Directions

1. Peel artichokes with a small knife and slice into chunks. Cook in a pan of boiling water for 5 mins, until tender, then drain.
2. Heat the oil in a heavy frying pan and saute artichokes for 10 mins until golden. Throw in the sugar, season, then add the walnut halves. Continue to cook until the walnuts are toasted, then toss in the garlic and parsley and serve.
