Artichoke Benedict With Hollandaise

A Delicious Breakfast Treat, For your Sunday Brunch, or just to spice up your mid week Doldrums
Ingredients
  Artichoke bottoms 2 , rinsed (drained)
  Canadian bacon slices/Smoked ham with no sugars or maple syrup 2
  Eggs 2
  Hollandaise sauce 4 Tablespoon
  Low fat hollandaise 1 Tablespoon
  Egg whites 2
  Light margarine 1 Tablespoon (Trans Fat Free)
  Lemon juice 1 Teaspoon
  Dijon mustard 1⁄2 Teaspoon
  Hot sauce 1 Dash
Directions

For Hollandaise
On a double Boiler over medium heat, add All Ingredients and Begin Wisking For about 3-5 minutes
Till mixture thickens to a thick creamy consistency, cooting the back of a spoon

For Benedict
Poach Eggs in Water with a dash of lemon juice or Vinegar till your desired Level of Doneness
Warm Bacon and Artichokes in a Dry Saute pan
Place ham on top of the Artichoke, place egg on Ham and top with 2 tbs of Hollandaise Sauce
