Fried Jerusalem Artichokes

Ingredients
4 to 6 Jerusalem artichokes
4 to 6 tablespoons oil
2 tablespoons toasted
Directions

Steam scrubbed whole artichokes in as little water as possible until just tender.
Do not overcook.
Cool and slice.
Fry in oil until browned and crunchy.
Sprinkle toasted sesame seeds over the artichokes before serving.
