Steamed Artichokes Verde

Ingredients
For artichokes
  Artichokes 8 Large
  Lemon juice 4 Tablespoon
  White onion 1 Small, finely chopped
  Garlic 1 Clove (5 gm), crushed
  Celery stalks 2
  Bay leaf 1
For sauce
  Sour cream 1 Cup (16 tbs)
  Mayonnaise 1 Cup (16 tbs)
  Garlic 1 Clove (5 gm)
  Parsley sprigs 3 (Stem And Leaves)
  Lemon 1 , juiced
  Canned anchovies 2 Ounce (1 Can)
  Whole green onions 4 (Tops And All)
Directions

The Artichokes:
Rinse artichokes. Cut off stems and remove bottom row of tough leaves. With kitchen scissors, trim the tops of remaining leaves. Brush trimmed areas with lemon juice to avoid discoloration.
Fill a large pot with water to a depth of 2 inches. Add the onion, garlic, celery, bay leaf, and 1 1/2 tablespoons lemon juice. Place artichokes, top side down, in water and steam covered for 40-45 minutes. Drain and place individual artichokes on serving plates.
The Sauce:
Place all ingredients in a blender or food processor and puree. Chill.
Serve in a small bowl beside each artichoke. Garnish each bowl with a thin slice of lemon.
