Fried Jerusalem Artichokes

Ingredients
  Jerusalem artichokes 1 1⁄2 Pound
Coating batter
  Fried parsley 1 Tablespoon
Directions

Prepare and parboil the artichokes (about 15 min.).
Cut them into slices 1/2 in thick and season them well.
Make the batter, dip in the slices of artichokes and fry in hot fat, at 340° F. until golden brown (5—7 min.), turning them during cooking.
Drain well and serve very hot with fried parsley.
