Artichoke And Curried Egg
|Eggs||6 , hardboiled|
|Canned artichoke hearts||16 Ounce (1 Can)|
|Mayonnaise||1⁄4 Cup (4 tbs)|
|Sour cream||1⁄2 Cup (8 tbs)|
Peel and chop the eggs.
Drain and chop the artichoke hearts.
Combine the eggs and artichokes into a very coarse spread.
Mix the mayonnaise, sour cream, salt, pepper, and curry powder (make the curry flavor rather light.
This is not to be hot but simply supportive of the eggs and artichokes.
Why can I not tell you how much curry? Because I am not sure what kind you use, and curry powders vary in strength).
Mix together, and refrigerate.
Mold into a mound on a lettuce leaf, and serve with crackers.
