How to Cook Dutch Oven Stuffed Artichokes

Gary House, prepares Dutch oven Stuffed Artichokes with the Camp Chef 12" Dutch oven and the Camp Chef Big Gas Grill. Simple, easy and large enough for a main course, these stuffed artichokes are perfect for a summer camping trip or a quick backyard dinner.

Ingredients

Globe artichoke 4
For stuffing
Garlic 4 Clove (20 gm) , minced
Bacon 1/2 Cup (8 tbs)
Parmesano romano cheese 1/4 Cup (4 tbs) (plus more for sprinkling)
Extra virgin olive oil 4 Tablespoon
Seasoned bread crumbs 1/2 Cup (8 tbs)
Chopped flat leaf parsley 1/4 Cup (4 tbs)
For dipping sauce
Mayonnaise 1/4 Cup (4 tbs)
Ketchup 1/4 Cup (4 tbs)
Lemon juice 1 Teaspoon
Coarse black pepper 1 Teaspoon

Directions

GETTING READY

1. Trim off the small leaves at the base and then trim the ends of the remaining leaves.  Cut a portion of the crown to make a flat area on top.

2. Slice the stem such that the artichokes fit in nicely into the dutch oven.

 

MAKING 

3. Prepare the stuffing by mixing together bread crumbs, bacon bits, parmigiano romano cheese, garlic and chopped flat leaf parsley. Pour in the olive oil and mix to bring everything together.

4. Stuff the artichokes nicely.

5. Arrange the stuffed artichokes in the dutch oven and pour water to the level of the artichoke stem in the dutch oven. 

6. Place the oven gently to the stove and bring the water to boil. Place the lid on top and reduce the heat to low.

7. Simmer the artichokes for about an hour on low heat. Pour more water mid way through the cook, if required.

8. Whisk mayonnaise, ketchup, lemon juice and pepper to make a dipping sauce. Set it aside.

 

SERVING

9. Arrange the artichokes on a serving dish. Sprinkle some cheese over the top and serve with the dipping sauce.
