Ingredients
  Sweet dessert manicotti 16
  Apricot pineapple preserves 3⁄4 Cup (12 tbs)
  Chopped walnuts 1⁄3 Cup (5.33 tbs)
  Vanilla ice cream scoop 8
  Whipped cream 3 Tablespoon (For Garnish)
  Maraschino cherries 4 , cut in half (For Garnish)
Directions

Spread each Sweet Dessert Manicotti with 1 teaspoon preserves.
On a large platter or serving tray, place 8 manicotti, preserve-side up.
Sprinkle each with 1 teaspoon chopped walnuts.
Place remaining 8 manicotti over nuts, preserve-side up.
Top each with 1 scoop of ice cream.
Pipe whipped cream around the scoops of ice cream.
Sprinkle each with an additional 1 teaspoon chopped walnuts.
Garnish with half a maraschino cherry.
Makes 8 servings.
