Apricot And Raspberry Glories

Ingredients
  Canned apricot halves 16 Ounce
  Raspberry flavored gelatin 3 Ounce (1 Package)
  Hot water 2⁄3 Cup (10.67 tbs)
  Plain yogurt 1 1⁄4 Cup (20 tbs)
  Honey 2 Tablespoon
  Cherries 2 (To Decorate)
Directions

Drain the juice from the apricots and make up to 300 ml/1/2 pint (1 1/4 cups) with water.
Reserve two apricot halves and slice the remainder.
Dissolve the jelly (gelatin) in the hot water, then stir in the fruit juice.
Pour into a shallow container and chill until set.
Turn the jelly out on to a wetted surface and, with a wet knife, chop it into small dice.
Mix together the yogurt and honey until they are well blended.
Layer the jelly, apricot slices and yogurt mixture in two large glasses.
Decorate each with an apricot half and a cherry.
Serve chilled.
Note: This recipe serves 2 people generously or will serve 4 if spooned into smaller glasses.
