Frozen Apricot Fluff

Ingredients
  Macaroon crumbs 1 Cup (16 tbs)
  Canned apricot halves 16 Ounce, drained and chopped
  Sugar 1 Cup (16 tbs)
  Lemon juice 1 Tablespoon
  Whipping cream 1 Cup (16 tbs)
Directions

Place half of macaroon crumbs in an 8-inch square baking pan, set aside.
Combine apricots, sugar, and lemon juice, mix well.
Beat whipping cream until stiff peaks form, fold into apricot mixture.
Pour into pan, spreading evenly; top with reserved crumbs.
Cover and freeze at least 6 hours.
Cut into squares to serve.
Garnish each serving with a dollop of whipped cream, lemon slice, and mint sprig,
